First, you need to heat the large non-stick skillet on medium high heat. Add chicken and cover it. Cook for 5 to 7 minutes. Then transfer to platter and cover to keep it warm. Then add the dressing: zucchini and onions to skillet, cook on medium heat for 4 minutes or until vegetables are crisp tender then stirring occasionally. Stir in tomatoes and snow peas and cook for 1 to 2 minutes until heated through. On the top of chicken put vegetables and cheese.
